8 Hands Dinner: A Reunion in Le Comptoir’s Eight-Year Journey

There are places we find ourselves wanting to return to, even after many years, not necessarily because we remember a particular dish, but because we remember how it felt to be there. A table, a glass of wine, a long evening, and conversations that may have happened years ago but somehow remain in our memories. For Le Comptoir, the past eight years have been made of moments like these: encounters that began with French cuisine and gradually became friendships, memories, and reasons to return.

Four Personalities, Four Perspectives, One Special Evening

As part of this special journey, Chef Cuong will bring his story from Hanoi to Da Nang. As the chef of ZAO Vietnamese Rooted Eatery, he approaches Vietnamese cuisine through its ingredients and the stories behind them, while seeking contemporary ways to reinterpret familiar values. This time, he leaves his kitchen in Hanoi to join three other culinary voices for an evening where their individual stories can meet.

From Ho Chi Minh City, Chef Thao of Maison Des Rêves brings a different journey, shaped by the ingredients, experiences and rhythm of life in the southern city. She comes to Da Nang not simply to present her own style, but to become part of a conversation between chefs, where different perspectives meet through a shared belief that a meaningful dining experience always begins with respect for ingredients and for the people gathered around the table.

At the heart of this gathering is Chef Olivier Corti, who has spent eight years writing the story of Le Comptoir in Da Nang. Born in Lyon, Olivier carries with him the memories, techniques and foundations of French cuisine, yet his years in Vietnam have allowed his cooking to evolve into an ongoing conversation between France and the country he has chosen to call home.

And if the dishes tell their stories through flavour, Sommelier Myriam Moretto allows those stories to continue through every glass. Having worked alongside Olivier since the early days, Myriam brings her own sense of refinement to the table, where wine is not simply paired with the food, but becomes part of the experience: giving each flavour room to unfold and each moment another reason to be remembered.
